Ingredients
- 1 cup butter, softened
- 3/4 cup granulated sugar
- 1/2 cup brown sugar
- 3½ cup flour, divided (your choice: all whole wheat pastry flour, 1/2 unbleached and 1/2 regular whole wheat, or all unbleached)
- 1/2 teaspoon ground cinnamon
- 1 cup sour cream or yogurt
- 3 eggs
- 1 teaspoon vanilla extract
- 2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup dried cranberries
- 1 cup fresh or frozen cranberries, chopped OR 3/4 c. to 1 c. prepared cranberry sauce
Instructions
- Heat oven to 350 degrees F (175 degrees C). Grease and flour (or sugar for a crusty exterior) 6 disposable mini loaf pans (approx. 5-3/4x 3-1/4 inches), 18 muffin cups (use muffin liners for convenience), or equivalent pan sizes as listed in the notes below.
- In a large mixing bowl, beat the softened butter with 1/2 cup of both white and brown sugars on low speed until just blended. Scrape down the sides of the bowl as needed. Beat in 2 cups of the flour until the mixture becomes crumbly.
- Remove 1½ cups of this crumbly mixture to a small bowl and add the ground cinnamon. Mix until thoroughly blended; this is your delicious crumb topping, so set it aside.
- To the mixture remaining in the large bowl, add the remaining 1/4 cup sugar, sour cream (or yogurt), eggs, and vanilla extract. Beat on low speed until just combined. Increase the speed to medium-high and continue to beat for 2 minutes, or until the batter is smooth and well-aerated.
- Add the remaining 1½ cups flour, baking powder, baking soda, and salt to the wet ingredients. Beat just until the dry ingredients are blended into the wet, being careful not to overmix.
- Gently fold in both the dried cranberries and your choice of fresh chopped cranberries or cranberry sauce (see notes on adding sauce). Spoon the dough evenly into your prepared pans, filling them approximately halfway.
- Evenly crumble the reserved cinnamon topping over the tops of the loaves or muffins. If using individual loaf pans, it’s a good idea to place them on a cookie sheet to make moving them in and out of the oven much easier.
- Bake for 35-40 minutes for loaves, or 20 minutes for regular muffins. The bread is done when a wooden toothpick inserted into the centers comes out clean. If using cranberry sauce, the toothpick test still applies – there should be no raw doughy particles, although a bit of melted sauce on the toothpick is normal.
- Remove the baked goods from the oven and transfer them to a wire rack. Let them cool in their pans for about 10 minutes before carefully removing them from the pans to cool completely on the wire rack.
Notes
You can adjust the pan sizes to fit your needs. Here are some common combinations I’ve used:
- An 8-mini loaf pan will yield 8 mini loaves + 6 regular muffins.
- A 4-small loaf pan (as shown in photos) will yield 4 small loaves + 6 regular muffins.
- 6 disposable mini loaf pans will yield 6 mini loaves + 4 regular muffins.
- Alternatively, the recipe can make approximately 18 regular muffins.
- For larger loaves, use 2 medium loaf pans (8″x4″).
- If you prefer mini muffins, this recipe can make about 48 mini muffins.
