  • 1 cup almond flour or meal
  • 3 tablespoons ground flaxseeds
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 to 2 large lemons zested & juiced (to equal 1 tablespoon zest & 1/3 cup juice)
  • 1 teaspoon lemon extract
  • 1 teaspoon pure vanilla
  • 1/4 cup coconut oil or butter
  • 6 tablespoons honey

Glaze:

  • 1 tablespoon honey
  • 1 teaspoon lemon juice

Instructions

  • Heat oven to 350°F (175°C) and line a 12-cup muffin pan with paper liners.
  • In a large mixing bowl, combine the oat flour, almond meal, ground flaxseeds, baking powder, and salt. Whisk these dry ingredients together thoroughly.
  • In a separate small bowl, vigorously whisk together the eggs, 1/3 cup fresh lemon juice, lemon zest, and both lemon and vanilla extracts until well combined.
