  • 1/4 cup chutney Spicy Rhubarb, Addictive Tomato or chutney of choice**
  • 1 clove garlic minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon sriracha sauce to taste, optional
  • 1/4 cup olive oil

Instructions

  • Combine all the salad ingredients – cooked shredded chicken, dried cranberries, diced onion, crumbled feta cheese, chopped walnuts (if using), and fresh chives or parsley – in a medium-sized bowl. Gently toss to distribute everything evenly.
  • Prepare the chutney dressing: In the bowl of a food processor or blender, combine the chutney, minced garlic, Dijon mustard, apple cider vinegar, and sriracha (if desired). Pulse until well combined. With the machine running, slowly drizzle in the olive oil until the dressing is completely emulsified and smooth.
