Chocolate Syrup:

  • 3/4 cup cocoa powder
  • 3/4 – 1 cup sugar lower amount makes a “dark” chocolate syrup
  • pinch salt
  • 1 cup boiling water
  • 1 teaspoon vanilla
  • Optional: 1½ teaspoons peppermint extract if making lower sugar option

Peppermint Syrup (Omit for Lower Sugar Option):

  • 1 cup water
  • 1 cup granulated sugar
  • 2 teaspoons pure peppermint extract

To make one serving of Peppermint Mocha or Hot Chocolate:

  • 1/2 cup warmed milk 1 cup for hot chocolate
  • 1/2 cup strong coffee omit for hot chocolate
  • 2 tablespoons chocolate syrup -OR chocolate peppermint syrup for lower sugar version
  • 1 tablespoon peppermint syrup -OMIT for lower sugar version
  • Optional for serving: whipped cream or marshmallows, crushed peppermint candies

Instructions

Chocolate Syrup:

  • In a small saucepan, combine the cocoa powder, sugar, and a pinch of salt. Stir in just enough boiling water to create a smooth, lump-free paste. Then, gradually add the remaining boiling water, stirring continuously.
  • Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring frequently to prevent sticking. Allow it to simmer for 2-3 minutes; I prefer the longer simmering time as it helps the syrup thicken slightly, resulting in a richer consistency.
  • Remove the saucepan from the heat. Stir in the vanilla extract. If you are making the lower-sugar option, now is the time to also add the 1½ teaspoons of peppermint extract. Let the syrup cool completely.
  • Once cooled, transfer the syrup to a clean bottle or jar. Store it in the refrigerator, where it will keep well for 4-6 weeks.

Peppermint Syrup (if using):

  • In a small saucepan, combine the granulated sugar and water. Bring the mixture to a boil over medium-high heat, stirring until the sugar begins to dissolve.
  • Reduce the heat to low and continue to stir for 4-5 minutes, or until the sugar is completely dissolved and the mixture appears clear. Do not boil vigorously; a gentle simmer is sufficient.
  • Remove the saucepan from the heat and stir in the pure peppermint extract. Allow the syrup to cool fully before pouring it into glass containers for storage in the refrigerator.

To make a serving of peppermint mocha or hot chocolate:

  • In a large mug, combine the warmed milk, coffee (if you’re making a mocha), and your chosen syrup(s). Stir thoroughly until all ingredients are well blended.
  • Crown your delicious beverage with your preferred topping: a generous swirl of whipped cream or a handful of soft marshmallows, and don’t forget a sprinkle of crushed peppermint candies for that extra festive touch!
