  • 1/2 cup orange juice
  • 1 tablespoon orange zest
  • 2 cup shredded zucchini
  • cups whole wheat pastry flour
  • 2 teaspoons baking soda
  • teaspoons baking powder
  • teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup chopped pecans or walnuts optional

Optional Low Sugar Glaze:*

  • 1/4 cup butter, softened
  • 2 tablespoons honey
  • 2 tablespoons orange juice
  • 1 teaspoon orange zest, optional

Instructions

Bread:

  • Heat oven to 325 degrees F (160 C). Grease and flour two 8×4″ loaf pans.
  • In a large mixing bowl, beat the eggs well. Then add the oil, honey, orange juice, orange zest, and shredded zucchini. Mix thoroughly until all wet ingredients are well combined.
