There are some dishes that transcend a simple recipe and become cherished traditions, and for our family, this hot bacon dip is undeniably one of them. I stumbled upon this gem years ago in a humble church cookbook, and ever since, it has held a coveted spot as my kids’ absolute favorite, a dish they still request as adults for family gatherings. While it might not fit into the “healthy” category, it is made with wholesome, real food ingredients and absolutely belongs in the “special occasion” hall of fame. I typically reserve this indulgent treat for just one or two times a year, often making an appearance during our New Year’s Day appetizer feast or for milestone birthday dinners. Without fail, every single time it hits the table, it disappears almost instantly, sparking joy and satisfied murmurs from everyone who tastes it.

It’s truly no surprise how quickly this creamy, rich dip is devoured. It’s packed with layers of incredible flavor: smoky, perfectly crisp bacon, a decadent combination of two or three premium cheeses, and a savory kick from fresh onions, all bound together by a creamy base of mayonnaise. The resulting texture is utterly irresistible – ooey, gooey, and unbelievably satisfying with every spoonful. While you can certainly bake this fantastic appetizer in a standard baking dish, I wholeheartedly recommend serving it in a round bread bowl. This presentation elevates the experience, not just making it visually appealing and fun, but also incredibly delicious. The soft bread pieces from the interior serve as perfect scoopers, and once the dip is all gone, the crispy, cheese-coated edges of the bread bowl are almost the best part! (Just almost, because the dip itself is truly legendary.)

Why This Cheesy Bacon Dip is a Must-Try Appetizer

If you’re looking for a signature dish that will earn you rave reviews and become a staple at your celebrations, this cheesy bacon dip recipe is it. Here’s why it stands out:

  • Unrivaled Flavor: The combination of savory bacon, multiple cheeses, aromatic onion, and garlic creates a flavor profile that is both complex and universally appealing.
  • Irresistible Texture: It’s the perfect balance of creamy, gooey melted cheese and satisfyingly crisp bacon bits.
  • Easy to Make: With just a handful of simple ingredients and minimal prep time, even novice cooks can achieve impressive results.
  • Stunning Presentation: Serving it in a hollowed-out bread bowl is not only practical (it’s edible!) but also adds a rustic, impressive touch to your appetizer spread.
  • Crowd-Pleaser Guaranteed: This dip consistently disappears fast, proving its popularity among all ages. It’s perfect for parties, holiday gatherings, game day events, or simply a cozy night in.
  • Versatile: While fantastic in a bread bowl, it can also be baked in a casserole dish and served with your favorite dippers.

Essential Recipe Ingredients for the Best Bacon Dip

Crafting this amazing cheesy bacon dip requires just six core ingredients, plus a loaf of bread if you choose the delightful bread bowl method. Simplicity truly meets sensational flavor here.

Arrangement of cheesy bacon dip ingredients on a white background: various cheeses, bacon, mayonnaise, onion, garlic, and a round bread loaf
  • Cheese: The secret to the best flavor lies in a dynamic combination. We recommend using both grated Parmesan cheese and a shredded blend of cheddar and Monterey Jack. For a deeper, more pronounced cheesy goodness, always opt for a sharp cheddar. While this blend offers superior taste, you can certainly use all cheddar or all Jack cheese if preferred, or even experiment with other melting cheeses like Gruyere or white cheddar for a unique twist. Freshly shredded cheese melts better than pre-shredded, which often contains anti-caking agents.
  • Bacon: For that perfect crispy texture, regular-cut bacon is ideal. Avoid thick-cut varieties, as they tend to become chewy rather than crisp in the dip. Can you use real bacon bits (like the kind from Costco) in a pinch? Yes, they will work, though they are smaller and won’t provide the same satisfying texture as freshly cooked and crumbled bacon. For the ultimate flavor and crunch in your warm bacon dip, cooking your own is highly recommended.
  • Onion: This ingredient is crucial for adding both depth of flavor and a subtle textural contrast. I would genuinely never omit it. However, if you have a strong aversion to onions, you can leave it out, though the dip’s flavor profile will be slightly different. Finely chopped onion ensures it blends seamlessly into the creamy cheese mixture.
  • Mayonnaise: This forms the creamy, binding base of the dip. The quality of your mayonnaise truly makes a difference here. If you’ve never tried making your own mayonnaise, I highly encourage it! It takes about 5 minutes to whip up homemade mayonnaise, and once you experience the fresh, rich taste, you might never go back to store-bought. Otherwise, select a high-quality brand that you love.
  • Garlic: Freshly minced garlic delivers a wonderful, pungent aroma and a robust flavor that elevates the dip. However, if fresh garlic isn’t available, you can substitute it with garlic powder – approximately 1/4 teaspoon for every clove of fresh garlic.
  • Bread: While not strictly essential (you can simply mix and spoon the ingredients into a regular baking dish), serving this dip in a round bread bowl is truly the only way I prepare it. The entire experience of dipping with pieces of the bread bowl itself is unbeatable. Plus, those crispy, cheesy edges and end pieces of the bread bowl that are left once the dip is gone are absolutely divine! If you’re feeling ambitious, you can use a round loaf of homemade yeast artisan bread or sourdough artisan bread (as seen in the photos). Otherwise, look for an unsliced round loaf at your local bakery or grocery store.

How to Make Cheesy Bacon Dip in a Bread Bowl: Step-by-Step Instructions

Creating this irresistible cheesy bacon dip is simpler than you might think, and the payoff in flavor is enormous. Here’s a detailed, visual guide to ensure your dip comes out perfectly every time. Remember, the full, printable recipe with exact measurements is provided below.

Bacon strips sizzling in a hot pan, cooking to a crisp

Step 1: Cook the Bacon to Perfection. Begin by preheating your oven to 350°F (175°C). Cook your bacon until it’s wonderfully crisp. You have two options here: you can chop the bacon into small pieces before cooking for more uniform bits, or cook the strips whole until crunchy and then crumble them afterward. Both methods work equally well, so choose what’s easiest for you. Once cooked, drain off the excess fat thoroughly and set the crispy bacon aside.

Step 2: Prepare Your Bread Bowl. If you’re using a bread bowl (highly recommended!), start by carefully cutting a lengthwise slice from the top of your round loaf of bread. This top piece will act as a lid during baking and later be cut into dippers.

Hollowing out the center of a bread loaf with a knife, leaving a thick crust for the dip

Step 3: Hollow Out the Bread. Using a sharp, thin knife, carefully cut around the inside edge of the bread loaf, creating a border. Gently remove the soft center of the bread, leaving behind a sturdy 1-inch thick shell. Don’t discard the removed bread! Cut it into bite-sized pieces; these will be your primary dippers for the luscious dip. Store these pieces in a covered container or bag to keep them fresh until serving. If you’re opting for a baking dish instead, simply butter the inside of a small casserole dish or pie plate.

Step 4: Prepare and Bake the Dip. In a medium mixing bowl, combine all the filling ingredients: the cooked and crumbled bacon, shredded cheeses (cheddar, jack, and parmesan), mayonnaise, finely chopped onion, and minced garlic. Mix everything thoroughly until well combined. Place your hollowed bread shell onto a small cookie sheet. Spoon the rich cheesy bacon mixture evenly into the bread shell, then carefully place the reserved top piece of bread back on to cover it. (If using a baking dish, spoon the mixture into the dish and cover it with a piece of aluminum foil.) Bake for approximately 1 hour, or until the dip is heated through, beautifully melted, and bubbly.

Make Ahead & Storage Tips for This Cheesy Bacon Dip

Planning ahead for your party or gathering? This easy cheesy bacon dip offers convenient make-ahead options to simplify your preparations:

  1. Assemble 2-3 Hours Before: You can fully assemble the cheese and bacon mixture inside the bread bowl 2-3 hours before you plan to bake it. Cover the bread bowl tightly with plastic wrap and store it in the refrigerator. When it’s time to bake, simply pop it in the preheated oven as per the instructions. This slight chill time can even help the flavors meld.
  2. Prepare the Day Before: For even earlier preparation, you can make the cheese mixture the day before serving. However, it’s best to store the cheese mixture separately from the bread shell. Keep the dip mixture covered in an airtight container in the refrigerator, and the hollowed bread shell (and its removed pieces) stored in a separate bag or container at room temperature. Assemble the dip in the bread bowl right before baking to ensure the freshest results and prevent the bread from getting soggy.

Storing Leftovers: If, by some miracle, you happen to have any leftovers of this incredibly popular dip, store them in an airtight container or a sealed baggie in the refrigerator for 2-3 days.

Reheating: For the best texture and flavor, reheat any leftover hot bacon dip in a toaster oven or air fryer for a few minutes until it’s warm and the cheese is bubbly again. This method helps the dip regain some of its crispy edges. Alternatively, you can reheat it in the microwave for about a minute, stirring halfway through, though the texture won’t be quite as crisp.

Biggest Tip for Serving: Once the glorious cheesy bacon dip has been completely devoured from the bread bowl, don’t just toss the shell! Grab a sharp knife and slice up the remaining coated bread shell into small, pie-shaped pieces. These crispy, cheese-laden pieces of bread are an incredible bonus treat and almost as good as the dip itself. Make sure to pass them around – they’re always a huge hit!

Variations & Customization Ideas for Your Cheesy Bacon Dip

While this classic hot bacon cheese dip recipe is perfect as is, it also serves as an excellent canvas for customization. Feel free to get creative and tailor it to your taste or the preferences of your guests:

  • Spice It Up: For a touch of heat, finely dice a jalapeño or two and mix it into the cheese blend. Remove the seeds for less heat, or leave them in for a fiery kick. A pinch of cayenne pepper or a dash of hot sauce can also add a pleasant warmth.
  • Herbaceous Twist: Fresh herbs can brighten the flavor. Consider adding a tablespoon of finely chopped chives, parsley, or even a hint of fresh thyme to the mixture.
  • Different Cheeses: Experiment with your favorite melting cheeses. Smoked gouda, provolone, or a spicy pepper jack can add new dimensions to the dip. Ensure you still maintain a good balance of flavors and textures.
  • Onion Alternatives: If you’re not a fan of raw onion, try sautéing the onion lightly before adding it to the dip mixture to soften its flavor. Alternatively, finely chopped green onions (scallions) can offer a milder, fresher onion note.
  • Garlic Powder for Convenience: If you don’t have fresh garlic, 1/4 teaspoon of garlic powder can be substituted for one clove of minced garlic. Onion powder can also be used if fresh onion is unavailable, though fresh is always preferred for optimal flavor.
  • Add a Crunchy Topping: Before baking, sprinkle a small amount of extra shredded cheese or a few more bacon bits on top for an even crispier crust. Crushed Ritz crackers mixed with melted butter can also create a delicious topping.

Serving Suggestions Beyond the Bread Bowl

While the bread bowl is our favorite way to serve this incredible dip, you can absolutely enjoy it with other dippers:

  • Classic Crackers: A variety of crackers – buttery, whole wheat, or seeded – are always a good choice.
  • Toasted Baguette Slices: Thinly sliced baguette, lightly toasted, provides a sturdy and delicious vehicle for the dip.
  • Vegetable Sticks: For a lighter option, offer an array of colorful vegetable sticks like carrots, celery, bell peppers, or cucumber slices.
  • Pretzel Crisps: The salty crunch of pretzel crisps pairs wonderfully with the rich, creamy dip.
  • Pita Chips: Baked or fried pita chips offer a hearty crunch that can stand up to the thick dip.

Cheesy Bacon Dip in a Bread Bowl (or not)

This cheesy bacon dip is baked to perfection with cheddar, jack, and crispy bacon for an easy, crowd-pleasing appetizer.

Prep Time: 15 mins

Cook Time: 1 hr

Total Time: 1 hr 15 mins

Yield: 16 servings

Author: Jami Boys

Equipment

  • Sharp Knife
  • Small Cookie Sheet

Ingredients

  • 1/2 pound bacon, about 8-10 thin slices (not thick cut)
  • 2 cups shredded cheddar or jack cheese (8 ounces)
  • 1 cup shredded parmesan cheese
  • 1 cup mayonnaise – try this 5 minute homemade mayo
  • 1 small onion, finely chopped
  • 1 clove garlic, minced (or 1/4 teaspoon garlic powder)
  • 1 loaf of round bread – homemade or store bought (or use a baking dish)

Instructions

  1. Heat the oven to 350 degrees F (175°C).
  2. Cook bacon until crisp. You can chop it all up before cooking or cook and crumble after – it’s your choice. Drain and set aside.
  3. Prep bread loaf (if using): Cut a lengthwise slice from the top of the loaf of bread. Remove inside of bread using a sharp, thin knife to cut around the edge of inside the loaf and remove the center leaving a 1-inch thick shell. Cut up the bread you pulled out into bite-size pieces and store in a covered container or baggie. (Alternately, you can butter the inside of a small baking dish or pie plate.)
  4. Make the dip. Combine all the filling ingredients in a small bowl and mix well. Set the bread shell onto a small cookie sheet, spoon the filling into the shell and cover with the top piece. (If using a baking dish, spoon into the dish and cover with a piece of foil.)
  5. Bake for 1 hour until it’s heated and melting all the way through. (The dip in a baking dish may take only 30-45 minutes to heat through, depending on the size of the dish, so start checking early.)
  6. To serve: Place the bread bowl on a cutting board. Remove the bread top and cut it into bite-size pieces, placing them around the bread bowl. Add the set aside bread pieces around the dip as well and serve as soon as possible. (If using a baking dish, serve with slices of bread and/or crackers.)
  7. TIP: Once the cheesy bacon dip is gone, get out a sharp knife and slice up the coated bread shell into small pie-shaped pieces. They are SO crispy and good so make sure to pass them around!

Notes

Two Options to Make Ahead:

  1. You can assemble the cheese mixture in the bread bowl completely 2-3 hours before baking and store, covered, in the refrigerator.
  2. You can make it the day before serving, BUT keep the cheese mixture separate from the bread shell, storing covered in the fridge and assembling right before baking.

Store & Reheat: Store any leftovers (if you have any!) in an airtight container or baggie in the fridge for 2-3 days. Reheat in a toaster oven or air fryer a couple minutes until toasted (best) or a minute in the microwave.
